Procedures of prolongation of liquid eggs durability

Among principles coming into questions for production of ESL-egg products there are special heat exchangers, impulse waves and heat filling. With use of certain combinations of temperature and time it is possible to produce a liquid egg product with prolonged durability (ESL), it means that it can be stored by 14 – 16 weeks longer in temperature 4 °C than in a standard pasteurization procedure. In development of new technologies an aim is either prolongation of durability without increase of till this time used temperatures or achievement of the same durability but with use of more regardful lower temperatures and thereby obtaining of a product with better function characteristics.
